Matt Manning One Ingredient Olive Oil Menu

A new month, a new dinner and cooking class from Chef Matt Manning.

I’m gonna rewind a little in case you don’t know what One Ingredient is. This unique dining experience showcases the versatility of one carefully chosen ingredient over all four courses of the evening. After Matt gives a demonstration of each course, guests re-create two of the courses and present them as a professional, before taking their dish into the relaxed dining room to devour with a wine pairing from an exclusive wine farm.

Matt can also hook you up with a private dining experience to at your home, or the unique One Ingredient concept for corporate events and private functions, as well as hosting cooking demonstrations.

“My goal is to keep producing top quality food which I can serve to guests who enjoy it, and then pair that food with the best wine available to showcase just how gastronomical food is. My next goal is to introduce One Ingredient to the Johannesburg and Durban market”

OK, ENOUGH ENOUGH. What’s on the menu for May?

Matt Manning One Ingredient Olive Oil Menu

The next ingredient for the May One Ingredient menu will be olive oil, Willow Creek Olive Oil to be exact.

Canapés

Pea and ham risotto balls, wholegrain mustard and truffle infused olive oil mouseline

Amuse

Confit chicken wings, asian style BBQ glaze, cucumber, spring onion and miso mayo

Starter

Coriander olive oil poached yellow fin tuna, bacon crisp, garlic crouton, aged pecorino, baby gem hearts and caesar dressing

Main

Slow cooked lamb rump, Parmesan olive oil infused soft polenta, dried rosa tomato petals, basil fluid gel, cumin roasted aubergine puree, olive oil and saffron lamb jus

Dessert

Blood orange olive oil cake, apricot caramel, peanut brittle and olive oil pannacotta
