Matt Manning One Ingredient October Almond Menu

Time sure flies when you’re eating good food. Every month Chef Matt and his team surprise and delight me with their one ingredient of choice, and the magical stuff that they do with it. How fancy a dinner could you make with almonds, you ask? This fancy a menu. Have a look below and then remember to book because it’s first come, first served. Tickets are R650 per person, which includes cooking demos, cooking some of your own, food and wine.

The dates and wine pairings for the October One Ingredient dinners are:  Friday 9th  & Saturday 10th | Jordan Wines and then Friday 23rd & Saturday 24th | MAN Family Wines.

Canapés
Braised pork and almond croquettes with smoked tomato ketchup
Amuse
Baby squid with spring onion, pineapple and almond
Starter
Pan roasted angel fish, chard tender stem broccoli, almond and coriander pesto, broccoli and bacon puree, bacon lardons and mussel veloute
Main
Grass fed beef, heritage tomatoes, almond agar, wild watercress, asparagus spears, beef cheek beignet and beef jus
Dessert
Bakewell pudding, roasted peaches, almond milk ice cream
