HOMEMADE BEEF BURGERS & HANDMADE POTATO WEDGES

INGREDIENTS FOR BURGER PATTIES:

  • 1kg lean beef mince
  • 120ml plain low fat yoghurt or double thick Greek yoghurt
  • 250ml bread crumbs
  • 100ml fresh chopped parsley
  • 1 small onion grated
  • 2 free range eggs
  • 1 table spoon Dijon mustard
  • salt & pepper to taste
  • 250ml sunflower or canola oil for frying

OTHER INGREDIENTS:

  • 4 – 6 good quality bread rolls of choice e.g. ciabatta – pumpkin seed – yellow corn (lightly toasted & with a little
  • smear of butter [optional])
  • 4 – 6 potatoes
  • 150ml olive oil
  • 30ml oreganum
  • 10ml paprika
  • salt & pepper to taste
  • 30ml lemon juice

POTATO WEDGES

  1. cut all the potatoes into thick wedges with the skin on (optional)
  2. place in an oven proof dish/baking tray
  3. mix the olive oil and lemon juice together and pour over potatoes
  4. season with oreganum, paprika, salt & pepper & grill for 30-40 minutes until golden

BURGER PATTIES:

  1. mix all the burger patty ingredients together well in a large bowl
  2. form into patties (size may vary according to preference)
  3. heat sunflower/canola oil in a large non-stick frying pan until hot
  4. place patties in hot oil and reduce slightly to a medium heat – leave enough space around the patties so that you
  5. are able lift them comfortably to turn them
  6. turn the patties after about 8-10 minutes
  7. allow another 8-10 minutes on the other side or until cooked through
  8. remove and place on a plate with absorbent paper towel to remove any excess oil
  9. toast the rolls, butter them and assemble the burgers
  10. patties can also be grilled in the oven at 180 degrees celcius for 20 minutes – basting baking tray with
  11. sunflower/canola oil and brush a little oil on top of each patty

SUGGESTED TOPPINGS:

  • grilled portobellini mushrooms, avo, goldew peppers, rocket, caramalised onion, mozzarella cheese, reduced fat
  • camembert cheese, cherry tomatoes tossed in balsamic vinegar

SUGGESTED ACCOMPANIMENTS OR DIPS:
