Warm Up This Winter with The Hussar Grill’s Legendary Tomato Soup

Because The Hussar doesn’t just do steak well.

It’s a no-brainer that when you want superb steak, you go to the Hussar Grill. They use only the best quality cuts of meat that come out tender and juicy every time.

But it’s winter. And that means it’s soup season. And if you’ve frequented the Hussar – as we have! – you’ll know that they do an amazing tomato soup. They’ve never shared their secret to this wonder starter, but now the cat is out of the bag.

Here’s how you can make your very own:

Ingredients:

  • 200g Onions
  • 100g Celery (finely chopped)
  • 100g Peppers (finely chopped)
  • 60g Brown sugar
  • 5g White pepper
  • 5g Salt
  • 1,5kg of All Gold tomato puree (Half of 1 x A10 tin)
  • 1, 25l Water
  • 500ml Fresh cream
  • 5g Coarse black pepper
  • 25g Garlic
  • 50ml Sunflower oil
  • 25g Sweet basil

Method:

  1. Sauté onions, celery, peppers, garlic and black pepper.
  2. Add tomato puree and water.
  3. Bring to the boil.
  4. Remove from the heat.
  5. Add the rest of the ingredients, except the basil.
  6. Blend until smooth in consistency, return to the pot.
  7. Add the basil.
  8. Bring to the boil.
  9. Simmer for 10 min.
  10. Serve immediately, or alternatively, refrigerate and consume within two days. Recipe makes 8 x 300ml portions.
